Ham & Bacon Cobb Salad

Cobb Salad is kinda the "whatever falls out of the fridge" of salads and for some reason most people go straight for chicken as the protein but to me a great Cobb Salad practically begs for 6S Ham and Bacon! Try it and let me know if you agree!
Ingredients
- (1) 6S Pasture Raised Boneless Ham, pre-cooked
- (1 lb) 6S Oh So Good, Can't Be Beat Bacon
- (6) 6S Truly Pasture Raised Eggs, Hard Boiled (but not too hard boiled - more like medium boiled)
- (2-3) Fresh Tomatoes, diced
- (1/2 Cup) Feta Cheese
- (1) Avocado, chopped
- (1 Cup) Green or Red Onions, finely chopped
- (1 Large Head) Green Leaf Lettuce
- (for drizzling) Carolina White Sauce Dressing
Directions
Preparation:
- Cook ham in slow oven until heated to an internal temperature of 145 degrees F. Then allow to cool a bit and slice and chop into bite size chunks.
- Meanwhile chop bacon into bite size chunks and fry in skillet. (Not too long! Dried up bacon is a travesty - it should still be juicy!) Remove to plate lined with paper towel.
- Drop Eggs in a pot of boiling water and allow to gently boil for 8 minutes, then plunge into ice water to cool for 4 minutes. Peel and chop as you prefer.
- Dice tomatoes, avocados, and green or red onions (or both!).
- Wash and chop your lettuce into bite size chunks.
- Make Carolina White Sauce Dressing (recipe below).
Assembly:
- Place lettuce on serving platter, assemble rows of each ingredient lengthwise across the lettuce Drizzle Carolina White Sauce Dressing overtop of the whole mixture.
- Enjoy!
Carolina White BBQ Sauce Recipe:
(The perfect compliment to everything pork!)
- 1.5 cups Mayonnaise
- 1/4 cup apple cider vinegar
- 1 garlic clove, minced
- 1 Tbsp spicy grainy mustard
- 2 tsp horseradish
- 1 tsp salt
Mix it all up and it's ready to go!
