The Cross Rib Roast comes from the shoulder area of the animal and yields cuts known for their rich, beefy flavour. It is a roast that is ideal for slow-cooking as layers of fat in the meat render during cooking and make the roast juicy and flavourful when cooked slowly with lots of liquid.
