Denise's Shrimp Fettuccini

Delicious Shrimp Fettuccini made with succulent Side Stripe Shrimp from our local Prince Rupert Fishermen!
Ingredients
- (1.5 lbs) Side Stripe Shrimp
- (6 oz) Fresh Fettuccini
- (1/2 cup) Butter
- (1 Large) Garlic Clove
- (1) Onion - sliced
- (2) Tomatoes - peeled & sliced
- (1 each) Red & Yellow Peppers
- (4 oz) Mushrooms - sliced
- (1 cup) Heavy Cream
- (1 cup) Parmesan Cheese - grated
- (to taste) Salt, Pepper & Nutmeg
Directions
- Boil fresh fettuccini 2-5 minutes until al dente.
- Melt butter in a large saute pan. Add garlic, onion, tomatoes, peppers, mushrooms & 6S Side Stripe Shrimp. Cook till shrimp is pink.
- Drain pasta well and add to the saute pan with 1/2 cup of the heavy cream. Cook rapidly until slightly thickened.
- Add remaining cream and 3/4 cup of the parmesan cheese and seasonings as desired then toss gently.
- Top with remaining parmesan cheese and serve immediately.
