Denise's Shrimp Fettuccini
Delicious Shrimp Fettuccini made with succulent Side Stripe Shrimp from our local Prince Rupert Fishermen!

Ingredients

  • (1.5 lbs) Side Stripe Shrimp
  • (6 oz) Fresh Fettuccini
  • (1/2 cup) Butter
  • (1 Large) Garlic Clove
  • (1) Onion - sliced
  • (2) Tomatoes - peeled & sliced
  • (1 each) Red & Yellow Peppers
  • (4 oz) Mushrooms - sliced
  • (1 cup) Heavy Cream
  • (1 cup) Parmesan Cheese - grated
  • (to taste) Salt, Pepper & Nutmeg

Directions

  1. Boil fresh fettuccini 2-5 minutes until al dente.
  2. Melt butter in a large saute pan. Add garlic, onion, tomatoes, peppers, mushrooms & 6S Side Stripe Shrimp. Cook till shrimp is pink.
  3. Drain pasta well and add to the saute pan with 1/2 cup of the heavy cream. Cook rapidly until slightly thickened.
  4. Add remaining cream and 3/4 cup of the parmesan cheese and seasonings as desired then toss gently.
  5. Top with remaining parmesan cheese and serve immediately.
